How to make CBD pancakes with coconut milk

You can now chill out and enjoy CBD infused pancakes! The fluffy buttermilk pancakes put a 2020 trendy twist on your classic lemon and sugar. 

Ingredients, Makes 6

 1 cup Vita Coco coconut milk

1 tbsp Vita Coco coconut oil (plus extra 1 tbsp for frying)

1 tsp apple cider vinegar

1 ripe banana, mashed

1 cup plain flour (gluten-free/regular)

1 tsp baking powder

1/2 tsp baking soda

A couple drops of CBD oil

Syrup

1/3 cup + 2 tbsp Vita Coco Infused Lemon and Cardamom

1 tbsp cornflour mixed with 1 tbsp water

1 tbsp sugar

1/8 tsp turmeric

Instructions

  • To make the syrup, mix all of the ingredients together in a small pan over a medium-high heat. Stir continuously until the syrup mixture has thickened. Transfer to a glass jar and leave to cool.
  • To make the buttermilk pancakes, start by mixing the coconut milk and vinegar together and set to one side.
  • In a mixing bowl, mix the flour, baking powder, soda and salt. 
  • Add the oil into the milk, then put the mixture into a blender and blend with the banana.
  • Pour into the mixing bowl along with the CBD oil and mix until a smooth batter forms.
  • Heat a little coconut oil in a frying pan until it starts to sizzle. Then add  ¼ cup (60ml) of batter to the pan. 
  • Cook until bubbles start to form on the top of the pancake, then flip and cook the other side. Repeat this step until all of the batter has been used.
  • Serve the pancakes straight away, with the lemon syrup and blueberries.
